1. Make the salad dressing by combining olive oil, lemon juice, salt, and pepper in a jar or bowl to shake or stir together.
2. In 5 separate air-tight containers, place half a cup of quinoa, half a cup of tomatoes, half a cup of cucumber, a quarter cup of parsley, a quarter cup of green onion, and two tablespoons of mint in each.
3. Once all 5 salad containers are made, store them in the fridge, along with the dressing.
4. When ready to enjoy a serving, remove a salad container from the fridge, re-combine the dressing, and drizzle a fifth of it over the salad, and dig in!
