Simple Spaghetti Squash

Our Simple Spaghetti Squash is a light, nutrient-rich dish that pairs tender, naturally sweet squash strands with savoury Parmesan and a touch of olive oil, making it an easy, wholesome way to enjoy a pasta-inspired meal—buon appetito!

Ingredients

1 spaghetti squash (approximately 48 oz.), halved lengthwise & seeded
5 tsp. olive oil
5 oz. parmesan cheese

Dash of parsley flakes
Pinch of pepper
Pinch of salt

Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. Place the squash cut-side down on the prepared baking sheet, and then place it in the hot oven to bake for 30 to 35 minutes.

3. Once the squash is baked, it can be easily pierced with a knife, remove it from the oven and let it cool for 5 minutes.

4. When the squash is cool enough to handle, scoop out the inside into a medium bowl using a spoon, and then top it with the olive oil, parmesan, salt, and pepper, tossing everything together.

5. Once the squash is well combined, serve it up, garnish it with some parsley, and dig in!

Tip

This recipe also makes a great meal prep, as once the squash is well combined, divide it into 5 servings and store them in 5 air-tight containers in the fridge. When ready to enjoy a serving, simply remove it from the fridge and pop it in the microwave for a few minutes.
