Simple Chicken Lettuce Salad

Our Simple Chicken Lettuce Salad recipe is light, nutrient-rich, and loaded with lean protein and healthy fats to support wellness goals without the fuss—enjoy!

Ingredients

2 5-oz. chicken breasts
4 cup lettuce
2 tsp. olive oil
2 tsp. lemon juice

2 tsp. avocado oil
Pinch of salt
Pinch of pepper

Instructions

1. Remove the chicken from the refrigerator at least 30 minutes before grilling.

2. While the chicken gets to room temperature, spread it with the avocado oil and sprinkle it with salt and pepper, and preheat the oven to 350°F.

3. As the cooking time approaches, preheat an oven-safe pan over medium-high heat.

4. Once hot, place the chicken, round side down, into the hot pan and let it cook for 4 to 5 minutes.

5. After that time, flip the chicken over, and place the pan in the oven to bake for 12 to 16 minutes.

6. While the chicken cooks, wash and chop the lettuce, and make the dressing by combining the olive oil and lemon juice with a pinch of salt and pepper.

7. Once the chicken is cooked, remove it from the oven and let it rest for 5 to 10 minutes.

8. After that time, slice the chicken, place each breast on a bed of 2 cups of lettuce, and drizzle with the dressing.

9. Once dressed, dig in and enjoy the salad!

Tip

For a little extra flavour and crunch, add a ¼ cup of sliced red onion, per serving, which would add ½ a Vegetable allotment.
