Rainbow Veggie Wrap

Our Rainbow Veggie Wrap recipe is a colourful, nutrient-rich meal that’s packed with fibre, vitamins, and crunch to keep you feeling full, nourished, and energized all week long—enjoy!

Ingredients

5 tortilla
2 cup cucumber, sliced
2 cup yellow bell pepper, sliced
2 cup red bell pepper, sliced

2 cup cabbage, sliced
1 cup carrot, sliced
5 tbsp. hummus
Pinch of salt

Instructions

1. Once all the veggies are sliced, make a wrap by spreading a tablespoon of hummus on a tortilla, and then topping it with a fifth of the carrots, yellow peppers, red peppers, cabbage, and cucumber, and then sprinkling with a pinch of salt.

2. Once the first wrap is made, make the other four wraps.

3. Once all wraps are made, serve them, and enjoy!

Tip

Wrap the wraps in plastic wrap and store them in the fridge until ready to enjoy one as an easy meal prep!
