1. Add all ingredients together in a bowl, except the syrup, and mix thoroughly, ensuring the bananas are fully mashed.
2. Once the pancake mixture is fully combined, cook the pancakes over low heat for 3 to 5 minutes per side or until browned; use a quarter cup to measure out the pancakes.
3. Once the pancakes are cooked, you can serve them right away (3 pancakes per serving) with a tablespoon of maple syrup, OR you can let them cool to meal prep.
4. If you're meal prepping, once the pancakes are cool, place a piece of parchment paper between each pancake and store them in a freezer-safe bag.
5. When ready to enjoy a serving, remove 3 packages from the bag, pop them in the microwave (one at a time) for a minute, and then top with a tablespoon of maple syrup!
