1. In a medium bowl, combine chicken, mayo, celery, green onion, mustard, dill, salt, and pepper.
2. Taste and season with additional salt and pepper if desired, and then store in an air-tight container in the fridge.
3. Clean lettuce, and then store it in an air-tight container in the fridge.
4. When ready to enjoy a serving, add one-fifth of the chicken salad to a slice of diet bread, add a half cup of lettuce, and then close the sandwich with the second slice of diet bread, and then dig in or wrap it up to pack for the day ahead!
