Baked Pumpkin & Feta

Our Baked Pumpkin & Feta is a simple yet flavourful dish that combines antioxidant-rich pumpkin, protein-packed feta, and a touch of sweet heat for an easy, nourishing dish that feels effortlessly gourmet—enjoy!

Ingredients

3 cup pumpkin, seeded & sliced
2 oz. feta
2 tbsp. honey
2 tsp. olive oil

2 tsp. chili flakes
4 sprigs rosemary
Pinch of pepper
Pinch of salt

Instructions

1. Preheat the oven to 425℉ and line a baking dish with parchment paper.

2. In a bowl or Ziploc bag, coat the pumpkin in the olive oil, chili flakes, salt, and pepper.

3. Place the seasoned pumpkin in a single layer in the baking dish, drizzle with half the honey, and top with the rosemary sprigs.

4. Once the pumpkin is dressed and ready to cook, place it in the oven to bake for 15 minutes.

5. After that time, remove the pumpkin from the oven, flip the slices, drizzle with the other half of the honey, crumble the feta on top, and place it back in the oven to bake for another 10 to 15 minutes.

6. After that time, remove the pumpkin from the oven, serve, and enjoy!

Tip

This dish makes 2 whole servings for a meatless meal, or makes 4 side servings to accompany any main, including turkey, chicken, steak, fish, and more!
